Purple Sprouts


Aren't these sprouts beautiful? My housemate gets a veg box every week and last week she had more sprouts than she knew what to do with- so I was a very lucky recipient. These sprouts were dark purple on the outside (like a red cabbage) but had snazzy flashes of colour when sliced open.

I was originally going to make a veggie roast to go with these, but in the end kept it simple. I wrapped some feta and loads of parsley in filo dough, roast some carrots, steamed some broccoli and had a super quick and easy meal. The sprouts? Sauteed in garlic just like my Dad makes. Yum.

I love sprouts too - I think most people boil the heck out of them,making taste of shoes!
The filo idea is awesome.

I think I'd still eat sprouts if they were boiled to death! But yes, it's all in the cooking I think. The filo parcels are based on samboussek, a recipe my Armenian friend taught me. Yum.
